Brownie with Chocolate Cream#
Ingredients#
5 eggs
500 g sugar
125 g all-purpose flour
100 g cocoa powder
250 g melted butter
30 g roughly chopped dark chocolate
Cream:#
200 g sifted powdered sugar
75 g room-temperature butter
30 g sifted cocoa powder
150 g cold cream cheese
Instructions#
Preheat the oven to 170°C (not fan-assisted).
In a large bowl, whisk together the eggs and sugar until light and fluffy.
Add the flour and cocoa powder, and whisk until everything is well combined.
Pour in the melted butter and stir to combine.
Manually mix in the dark chocolate.
Spread the batter into a baking pan (about 30 × 25 cm) lined with baking paper.
Bake for 30–35 minutes, or until the top is set but the brownie is still soft in the middle.
Let the brownie cool completely.
For the cream:#
Whisk together the powdered sugar, butter, and cocoa at medium speed until well combined and smooth.
Add the cream cheese all at once and mix until fully incorporated.
Increase to medium-high speed and beat until the frosting is light and fluffy, at least 5 minutes — but be careful not to overmix.
Spread the frosting over the brownie once it’s completely cool.
