Brandade croquettes (with cod)#
Ingredients#
(For 4 People)
400 g Cod fillet
400 g Baking potatoes
3 cloves of garlic
2 dl Milk
1 dl Olive oil
100 g Wheat flour
200 g Panko breadcrumbs
3 Eggs, (whisked eggs)
1 l Frying oil (the one you want to use, I use olive oil as I do not deep fry that often)
Instructions#
Boil the potatoes until tender in unsalted water
Boil the garlic cloves in the milk
Boil the cod in well-salted water until tender
Mash the boiled potatoes with a whisk and add a little of the milk that the garlic has cooked in. Be careful not to make the mash too soft
Add the cod and beat it into the mash
Chop or mash the boiled garlic cloves and mix them into the mash. Add the olive oil while beating. Season with salt and pepper
Refrigerate the Brandade for approx. 3-4 hours
Form the Brandade into balls the size of a golf ball. Wet your hands in a little water when shaping them
Put the oil in a pan and heat to 180 degrees
Roll the balls in flour, egg and panko breadcrumbs
Fry the balls in the oil until golden. Remove them from the oil and drain on paper
Sprinkle with fine salt before serving
